Lindt Brownies

This Recipe will surely win all the Brownie Points!

Ingredients:

  • 1 1/4  sticks unsalted butter, plus more, softened, for greasing

  • 4 ounces chocolate chips

  • 1/4 cup unsweetened dutch process cocoa powder, divided

  • 1/2 tablespoon espresso powder

  • 1cups granulated sugar

  • 1/4 cup dark brown sugar

  • 1 teaspoons vanilla extract

  • 1 teaspoons kosher salt

  • 3 large eggs

  • (egg substitute: 1/4 cup yogurt per egg)

  • 1/2 cup all-purpose flour

  • 8 Milk Chocolate Lindt Truffles: You can use any truffle you like!

Steps:

  1. Grease your baking pan of choice,then line with parchment paper, leaving overhang on all sides. Grease the parchment with softened butter.

  2. Combine the chocolate chips, cocoa powder, and espresso powder in medium bowl and set aside.

  3. Add the butter to a small saucepan over medium heat and cook until the butter begins to simmer.Immediately pour the hot butter over the chocolate mixture and let sit for 2 minutes. Whisk until the chocolate is melted and well combined.

  4. Combine the granulated sugar, brown sugar, vanilla extract, salt, and eggs in a large bowl. Beat in mixer on high speed until light and fluffy, about 8-10 minutes.

  5. With the mixer on, pour in the slightly cooled chocolate and butter mixture and blend until smooth.

  6. Preheat oven to 350°F.

  7. Sift in the flour and use a rubber spatula to gently fold until just combined.

  8. Pour the batter into the prepared baking pan and smooth the top with a spatula. Bake until lightly puffed on top, about 20 minutes.

  9. Set the brownies on a cooling rack and insert the truffles evenly into the brownies once the brownies are almost cooled.

  10. Cut and Serve!
